Unlike the Scotch Fillet, the Sirloin has a thin layer of fat on top which adds to the flavour and tenderness of this steak during the cooking process. Even if you are weight watching, cut the fat off after you have cooked the steak, not before! 

On the Steak Scale the Sirloin sits between a Scotch Fillet and Eye Fillet - much more flavour than an Eye Fillet and not as fancy as a Scotch Fillet. It is the perfect in-between for value & quality!
